Located at the Sheraton Fji Resort, this is my favourite restaurant in Fiji! Flying Fish was first opened by Peter Kuruvita in 2008. You might recognize him from one of his food and travel shows. Besides stunning views overlooking the pool and the ocean (great spot for a sunset cocktail!) the food is amazing! Chef Kim Brennan has been looking after Flying Fish for the last year and a half and has added some new dishes to the menu.
If you only go once while you are visiting, order the 5 course degustation menu. While FJ$175 (excluding 20%tax) isn’t cheap, it is totally worth it. The degustation starts with the poached prawn, watermelon with a coriander, coconut and mint vinaigrette. After that, you’ll get to taste one of Peter Kuruvita’s signature dishes and my all time favourite entre – the seared yellow fin tuna with sweet crackling pork and grapefruit. Delicious! After that you’ll have the sautéed scallops with sweet corn puree. Then you have a choice of fish or Wagyu beef for your main. They are both fantastic but I loved the beef! The sirloin comes with crispy polenta, caramelized onions and chimmichurri. If after that you still have room for dessert, the banana parfait served with chocolate mouse and salted peanut butter brittle is divine!
